Creamy porridge & Easy flatbreads
Start your day with a warm, hearty and filling bowl of porridge! Make it extra creamy and filling by using soy drink as the liquid. Next day (or the same if you’re extra hungry), you’ll have another warm, hearty and filling breakfast containing of flatbreads made with the same batch of porridge.
This recipe gives you two bowls of rich, nutritious porridge — and enough leftovers to bake quick flatbreads the next day.
- 2 Servings
- Porridge prep time: 5 minutes (+cooking)
- Flatbreads prep time: 5 minutes (+baking)
- Difficulty level: Intermediate
Ingredients (Porridge):
- 1 L Oddlygood® Soy Drink
- 4 dl rolled oats
- A pinch of salt
Ingredients (Flatbreads):
- Leftover porridge (approx. half the batch)
- About 3 dl flour (adjust as needed)
- Splash of water (only if the dough feels too thick or dry)
Instructions (Porridge):
1. Add the Oddlygood® Soy Drink and rolled oats to a saucepan at the same time.
2. Heat gently over low heat, stirring occasionally. Let it cook slowly for 10–15 minutes, or until the oats have absorbed most of the liquid. Keep the heat low to avoid burning.
3. Add a pinch of salt once it starts to thicken.
4. When the porridge is creamy and cooked, scoop about half into two bowls.
5. Add your favourite toppings: berries, nut butter, roasted nuts, chocolate spread, butter, maple syrup — whatever you’re in the mood for! Cover and store the remaining porridge in the fridge for the next day’s flatbreads.
Instructions (Flatbreads):
1. Preheat the oven to 200°C (392°F).
2. Mix the leftover porridge with the flour in a bowl. If the mixture is very thick, add a splash of water to loosen it slightly.
3. Drop dollops of the mixture onto a baking tray lined with parchment paper.
4. Flatten the dough into rounds using your hands—aim for about 1 cm thickness.
5. Bake for about 15 minutes, or until the flatbreads are slightly golden and firm to the touch.
6. Enjoy warm, just as they are or with a spread of your choice.
